Simple Yeasted Bread

Ingredients:
- 700g all-purpose flour
- 450g water
- 1 cube of fresh yeast - or 1 packet of dry yeast
- 3 teaspoons of salt
- (optionally 1 teaspoon of sugar or honey)
Activate your yeast by adding 100 of the 450g water into a microwaveable bowl. Microwave the water until the temperature is around 35-40C. Test the temperature by thermometer or by tasting the water. it should be the same temperature as your tongue. Whisk the yeast into the water along with the sugar or honey to speed up the process. Wait for around 5-10 minutes until doubled.
knead the yeast with the other ingredients in a large bowl for around 5-10 minutes. (I really don't care about the shape. if you want you can knead until it passes the window test.)
Cover and let rise for 2-4 hours, or until it has doubled in size.
line a pot or bread pan with parchment paper (preferrably a thick, ceramic pot with a lid). Knead the dough into a ball-like shape and place it into the pot.
let rise for 30 minutes in the covered pot. Preheat the pan to 250C while waiting.
after 30 minutes put the covered pot into the preheated oven. bake for 30-40 Minutes.
After the 30-40 minutes have passed, remove the lid and bake for another 15-20 minutes at 230C, or until the top has browned.
Remove from oven, let it cool down completely for 1-2 hrs, slice and enjoy!
