Chocolate Cardamom Buns

Ingredients:
- 200ml + 100ml milk
- 2 eggs (divided)
- 500g flour
- 70g + 5g white sugar
- 1 packet of dry yeast, or one cube of fresh yeast
- 1 teaspoon of ground cardamom
- 75g soft butter
- 200g dark/milk chocolate chips, or chopped chocolate chunks
Instructions:
Activate the yeast with 100ml of milk and 5g sugar (click here for my yeast activation guide)
Mix one egg with 200ml milk in a large bowl.
Add the flour, cardamom, and sugar into the bowl. Knead until there is no more dry flour. Then mix in the soft butter and knead until The mass is less gummy, rippy and sticky. An electric dough kneader would probably take around 5-10min, whereas by hand it would take around 20min.
Knead the chocolate chunks into the dough.
Cover the dough and let rise for 1 hour.
After one hour lightly flour your working surface and divide the dough into 12 equal pieces. Shape them into balls.
line a baking tray with baking paper and arrange the balls on the tray.
Cover the tray with a cloth or foil and let the balls rest for 30min.
Meanwhile preheat the oven to 180C (360F).
Before you put the buns in the oven, beat an egg and wash it with a brush or your fingers over the dough balls. (you don't have to use all of the egg, just enough to completely cover the balls)
Put the uncovered tray into the oven and bake for around 20 minutes. Make sure that the whole surface, even the edges, turn golden brown. If they are too light, you risk having a gummy centre. Just make sure they dont turn black.
let them cool down a bit and enjoy your chocolate cardamom buns!
